Today I whipped up a quick batch of almond biscuits for guests afternoon tea. They are super easy to make - only 4 ingredients and no need for a mixer! Great for those days when you need something quick.
450g soft butter
200g caster sugar
250g plain flour
200g ground almonds
24 blanched almonds (optional)
1. Beat butter and sugar in together mixing bowl until pale. Add ground almonds, then flour. When JUST combined, roll into a log and wrap in cling film. Chill for half an hour.
2. Cut into 24 even sized pieces and roll each into a ball. Squash an almond on top if using. Place on baking tray and bake for 25 mins at 150 celcius.
3. Cool on wire rack, et voila! Quick & simple biscuits for your afternoon cuppa tea.
